Kitchen Utensils Needed:
A non-stick pan that can be put under the broiler ORA stainless steel pan that can go under the broiler
Note: You do not need the lid for your pan. If you use the stainless steel like me, make sure that the bottom of the pan is coated well with EVOO.
Ingredients:
EVOO (for the bottom of your pan)Eggs (Preferably organic, brown, cage-free for optimum health)
Broccoli
Onion
Peppers (whatever colors you have available)
Mushrooms
And whatever else you like in your eggs
Mustard (Dijon is best for eggs in my opinion)
Heavy Whipping Cream
Various Cheeses (Whatever you have in your fridge. I prefer gouda, cheddar, feta, and goat)
Some Balsamic Vinegar
Salt and Pepper
Directions:
Turn your oven to broil on HIGH. Gauge the amount of each ingredient that you need for the number of people you are cooking for. Example: If I am cooking for just me and my husband I only need 4-6 eggs and a handful of each chopped veggie. Chop your veggies and saute them in a non-stick pan. Pour them into a bowl and season with the balsamic vinegar and some salt and pepper to taste. Set aside.Beat your eggs in a bowl with the mustard and cream (I add cream because it makes for creamier eggs). Pour into the oven safe pan and let cook on medium-low heat WITHOUT stirring until it looks like only the top is not cooked. As this is going you should use a spatula and lift the top edges of the egg away from the pan so that it will remove later. After it is firm, sprinkle veggies over the top and DO NOT STIR. When it looks like the egg is almost completely cooked, sprinkle all of the cheeses (minus the goat cheese) on top and put in the oven. Let sit for about 5 minutes or until the cheeses are nice and toasty. Take it out and slide it out of the pan onto a plate. Add the goat cheese on top and enjoy! (My husband does not like goat cheese so I just don't include it on his part.)
