This is a family favorite. They are soft and chewy and one of the healthiest cookies I have ever made. Mind you they are not wholly healthy but better than the majority of cookies out there.
Ingredients
1 c butter softened (if you use smart balance or other healthy butter sub. it increases the health value)
1 c firmly packed brown sugar
1/2 c granulated sugar
2 eggs
2 tsp vanilla
1 1/2 c wheat flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp kosher salt
3 c uncooked oats
1 c raisin
* 1 Tbs chia seeds (optional)
* Chia seeds are a glycemic index of 1 and will reduce the high glycemic index of the cookie. This makes the cookie better for you and adds minerals and vitamins. Chia seeds are found in bulk at Sunflower Market or other whole food stores. For more info. please see link for living and raw foods.
Directions:
Preheat Oven 350 degrees. Beat together the butter and sugars until creamy. Add eggs and vanilla, beat well. Add combined flour, baking soda, spices, *seeds, and salt. Mix well. Add in oats and raisins mix well. Drop rounded Tbs onto a lightly greased pan. Bake 10-12 min until golden brown. Let cool 1 min on the cookie sheet, remove to wire rack. It makes about 3 dz.
