Substitute for Mashed Potatoes

The only kind of potato that I can eat is sweet potatoes and my husband doesn't eat potatoes at all. So, for recipes that call for mashed potatoes or rice, I have borrowed an idea from my mother's kitchen (again, I know, she is a totally awesome cook).

Ingredients:
2-3 Heads Cauliflower
Butter
Sea Salt
Pepper

Directions:
Steam the cauliflower with a liberal sprinkling of salt until soft (for mashed potatoes, you want it rather soft).  Then mash with a fork (for rice texture) or a blender (for mashed potatoes). Add butter, whipping cream, salt, pepper.
