Ingredients:
1 lb. ground turkey
1 C. grated Mozzarella
1/2 C. grated parmesan
Oregano
Parsley
1 egg
Shredded Wheat
Whole Wheat Spaghetti Pasta
Your Favorite Bought or Homemade Spaghetti Sauce (just the sauce without added veggies or meat)
Directions:
Preheat your oven to 250 degrees. Combine the ground turkey, mozzarella, parmesan, oregano, parsley, and egg in a bowl. Soak the shredded wheat in water until soft. Squeeze as much liquid out of the wheat as possible and add the wheat to the meat mixture. Put this in the fridge to firm up a bit. Pull out your dutch oven and make or pour in your favorite basic spaghetti sauce. Be sure to coat the bottom with EVOO first and let it warm so that you don't ruin your dutch oven. (My sauce is just parsley and garlic cooked with two cans of organic tomato sauce). Allow this to simmer on very low while you pull out the meat mixture. Form golf-sized balls with the meat and cook them in a non-stick skillet on the stove, turning occasionally until the outside is dark brown. (The inside does not need to be cooked at this point). Add each batch of meatballs to the dutch oven sauce mixture until there is no more meat. Put the cover on your dutch oven and put it in the oven at 250 degrees for about 35-40minutes. Add to noodles and enjoy!
