Slow Cooker Pulled Pork

I love pulled pork. It's one of my favorites. But I've never made it. Honestly it sort of intimidated me. But, I gave it a whirl and I'm so glad I did! I found the original recipe at A Year of Slow Cooking. I like this blog, but I've found the recipes can be sort of hit or miss, so I read the recipes carefully to see if they're up to snuff. This one was a winner and so easy. I served it on whole wheat sandwich buns with sides of sweet potato fries and steamed green beans. Delicious!

Ingredients

3 pound pork shoulder
1 sweet onion, sliced
2 cups ketchup
1/2 cup water
1/4 cup apple cider vinegar
1/4 cup brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1/2 teaspoon chili powder
1/2 teaspoon coarse sea salt

Trim fat off of pork shoulder and place in crock pot. Top with sliced onion (I sliced mine about a 1/4 in thick). Whisk remaining ingredients in a separate bowl and then pour over pork. Cook on low for 8-10 hours. Remove pork and pour liquid into a sauce pan and reduce until thickened (about 5 minutes), then pour back over the pork and shred with two forks. Serve on sandwich buns and enjoy!
